Why Are My Espresso Shots Running Too Fast?
If your espresso is pouring in under 20 seconds, it means water is passing through the coffee puck too quickly. This results in under-extracted, sour, and watery espresso. The most common cause on the Breville Barista Express is the grind size being too coarse. Other causes include insufficient coffee dose, uneven tamping, or using stale beans that have lost their CO₂ and can't resist water flow properly.
Step 1: Adjust Your Grind Size Finer
On the Breville Barista Express, start by moving your grind setting 1-2 numbers finer. If you're currently at grind size 8, try 6. A finer grind creates more resistance, slowing the water flow and increasing extraction time. The sweet spot for most beans on the Barista Express is between grind size 3 and 7 on the internal grinder, but this varies with every bean.
Step 2: Check Your Dose
Weigh your coffee dose using kitchen scales. For a double shot on the Breville Barista Express, aim for 18-20g of ground coffee. If you're under-dosing, there's less coffee for the water to pass through, which speeds up the shot. Step 3: Improve Your Tamp
An uneven or light tamp can create channels where water rushes through too quickly. Apply firm, level pressure — about 15kg of force. The puck should be flat and even. If you notice water spraying or spurting from the portafilter (especially a bottomless one), channelling is likely the issue.
Step 4: Check Bean Freshness
Coffee beans are at their best for espresso between 7-21 days after roasting. Beans that are too fresh (under 5 days) will produce excess crema and inconsistent flow. Beans that are stale (over 4-6 weeks) lose resistance and shots will run fast. Always check the roast date on your bag. If there's no date, the beans are probably too old.
